The second syndrome is a late-onset food poisoning: spores survive cooking in meats and gravies, germinate during slow cooling or warm holding, and ingested organisms release enterotoxin in the gut, causing watery diarrhea and cramps roughly 8 to 16 hours after the meal, typically resolving within a day.
